Rainbow Ranch Lodge is an intimate twenty-one room hote! l and gourmet restaurant located on the banks of the Gallatin River in Big Sky, Montana.
Columbia Hospitality is currently seeking an experienced Executive Chef to oversee and direct the Culinary operations at Rainbow Ranch Lodge.

ESSENTIAL DUTIES AND RESPONSIBILITIES:
1) Organization; lead by example. Consistently set the level of expectation for co-workers

2) Communicate with the co-workers to determine readiness prior to service

3) Hold daily meetings in preparation of service to insure all aspects of the service run with solidarity and the staff continues to stay well informed.

4) Ongoing staff training to insure consistent level of production and service.

5) Physically check the quality and freshness of all mise en place prior to service

6) Anticipate needs of service, checking that the line is set, plates are stocked, and the back kitchen is set.

7) Has an understanding of the needs and requ! irements to run multiple outlets simultaneously utilizing a di! verse culinary team.

8) Job follow through; assure that tasks that have been started are complete

9) Organization; lead by example. Consistently set the level of expectation for co-workers

10) Care of materials; insure that kitchen equipment is properly maintained, stored, cleaned and used.

11) Control the cleanliness of both personal stations and all areas of the kitchen including the dish area, dry storage, prep area, linen, recycling service and all public areas.

12) Presents and visible identity to guests and interacts with customer feedback directly and in a hands on manner.

13) Oversee the daily aspects of all kitchen operations and expediting service.

14) Create and maintain revolving menu concepts for all outlets within the confines of the core culinary program. The kitchen is looked at and treated as a whole. Rainbow Ranch Lodge needs to carry forth a holistic approach to its culinary foundation. Workin! g as whole with the idea of commissary environment as the base without independent silos.

15) Insure all prep lists for the next service are completed. Insure all orders are place.

16) Organize and expedite any given meal service period with efficiency and finesse.

17) Dependability; assuring that all tasks are completed consistently. Closing side work and properly closing the kitchen.

QUALIFICATIONS, EDUCATION and/or EXPERIENCE.

1) A Bachelor’s degree and equivalent training with 8+ years of industry and culinary management experience.

2) Working knowledge of culinary trends with a focus on quality, production, sanitation, and presentation.

3) Working knowledge of financial, budgetary, and food cost control practices.

4) Ability to discern and evaluate the condition or quality of food products through visual inspection, taste, touch and smell.

5) Food handling and other permits, licenses or ! certifications as required.

6) Insure all prep lists and side ! work is complete for the next services are completed.

7) Demonstrates advanced culinary product knowledge and technique

8) Can excel in basic eye hand coordination and knife skills

9) Demonstrates kinetic ability and maneuverability

10) Is able to multi task in both peak and slack times

11) Ability to perform progressive technique, obtain growth milestones and skill set

12) Is able to judge food by, taste, texture and appearance

13) Communication and staff relation feedback. Communicates positivity with team members.

14) Communicates with leaders in insure readiness and is able to ask for help

15) Is able to be malleable and accept feedback from both team leader and team members

16) Shows the ability to communicate consistently during both peak and slack meal service periods

SCHEDULE REQUIREMENTS

This is a Full-Time â€"Exempt (Salary) position. Hours: Full Time! , evening and weekend availability required
